Cherry Chutney Recipe

I found this recipe originally on Stacey Snacks blog. It is easy to make, tasty, and a great way to use up those extra and imperfect dark cherries. Perfect on roast pork, chicken, white fish - or even chilled on a a slice of double cream brie.

1 pound dark, sweet cherries - pitted
3/4 cup gravenstein apple cider vinegar
1/4 cup orange juice - with pulp
1/2 white onion - chopped
1/4 cup golden raisins
1-1/2 tablespoons grated fresh ginger
1/2 cup super fine sugar
1/8 teaspoon freshly grated nutmeg
1/8 teaspoon ground cloves
1/2 teaspoon ground cinnamon
3/4 teaspoon mustard seeds
1/4 teaspoon freshly ground black pepper

Mix all ingredients in a heavy bottomed saucepan and bring to a boil. Turn heat down and simmer mixture for about 45 minutes, uncovered, until it starts to thicken.
