Carrot & Turnip Mash Recipe
This dish adds lovely color as well as healthy vitamins, minerals, and fiber to any holiday table. Don’t be tempted to use ground nutmeg from your spice rack; the slightly exotic flavor of fresh-ground nutmeg makes the dish something special.
Directions:
1. Wash and peel carrots and turnip, and cut into 2” pieces.
2. Place in a large saucepan with enough cold water to cover and bring to a boil.
3. Reduce heat slightly, and cook at a moderate boil until vegetables are tender, 10 to 13 minutes.
4. Drain vegetables and return to cooking pot.
5. Mash slightly, then add butter and continue to mash to desired consistency.
6. Add salt and pepper to taste and transfer vegetables to a serving bowl.
7. Sprinkle the top with a few good gratings of fresh-ground nutmeg and serve.
