Tim's Favorite Carrot Soup Recipe

This is a simple recipe, and therefore, one of Tim's favorite.


1/2 stick unsalted butter

2 large onions - sliced

1/2 teaspoon India Tree Super Fine Sugar

2-1/2 pounds of carrots - peeled and sliced

sea salt to taste

6 cups More Than Gourmet Chicken Stock


1. Melt butter in a large, heavy-bottom pot. Add sliced onions and sugar to pot and cook over medium heat until the onions are tender - about 10 minutes.

2. Add sliced carrots and sea salt. Cook for 5-7 minutes.

3. Add chicken stock and bring to a boil.

4. Lower heat and simmer until the carrots are just tender - about 35 minutes. Don't over cook as the carrots have a tendency to turn bitter.

5. When done, season with more salt to taste and puree with a stick style blender in the pot or in food processor.

serves 6-8
