Carrot Soup Recipe


1/2 stick unsalted butter

2 large onions - sliced

2-1/2 pounds of carrots - peeled and sliced 

sea salt to taste

6 cups vegetable or chicken stock 


Homemade Carrot Soup Recipe

This is an easy recipe and amazingly delicious.


1. Melt butter in a large, heavy-bottom pot. Add sliced onions and cook over medium heat until the onions are tender - about 10 minutes.

2. Add sliced carrots and sea salt. Cook for 5-7 minutes.

3. Add vegetable or chicken stock and bring to a boil.

4. Lower heat and simmer until the carrots are just tender - about 35 minutes. Don't over cook as the carrots have a tendency to turn bitter.

5. When done, season with more salt to taste and puree with a stick style blender in the pot or in a food processor.
