Pecorino Sardo and Fiore Sardo (Smoked Pecorino) are two cheeses Sardinia is particularly known for.
This cheese is a classic DOP 100% locally made sheep milk Pecorino aged 12 months, and then lightly smoked - giving it a slightly smoky, nutty flavor. Made from whole sheep's milk, curdled with lamb rennet. Slightly straw-yellow white cheese with hints of milk and vegetables when young; fragrant, tasty and tending to spicy and a strong flavor when matured. Deep yellow to dark brown rind. Table consumption at 3-4 months, grater consumption at 6 months and more.
At 12 months, it is considered a grating cheese - much like Parmigiano-Reggiano. But like Parm, it can be eaten straight, if you like.
