Spaghetti Aglio e Olio Recipe


Straight past like spaghetti

1 head of garlic - mashed whole cloves 

olive oil

chili pepper oil - chili peppers in oil diced

sea salt for pasta water

grated cheese


Spaghetti Aglio e Olio Recipe

This is a fabulous Roman dish. Simple preparation with delicious results!

1. Boil pasta in well salted water to al dente and save some pasta water for garlic

2. Sauté garlic and chili pepper in olive oil 

3. Remove from heat and drizzle in a tablespoon of pasta water and boil it away

4. Add the pasta to the pan 

5. Top with grated cheese like Fiore Sardo or Parmigiano-Reggiano
