4 Craft Chocolate Makers are in town for the Northwest Chocolate Show, and have agreed to stop by the shop (ChefShop.com, 1425 Elliott Ave W, Seattle, 98119) with samples - so that you can come say "Hi!" - and try some of her delicious chocolate creations! 

MISSION CHOCOLATE - Brazil: Arcelia Gallardo is the founder of Mission Chocolate, and is a truly international craft chocolate maker, embracing the spirit of the local Brazilian farm-to-bar chocolate production. Arcelia makes her world-class chocolate bars almost exclusively with locally grown and processed ingredients, including Brazilian-grown cacao beans and Brazilian-grown nuts and fruits.

ARGENCOVE - Nicaragua: Argencove is the story of three Australian families that moved to Nicaragua together specifically in the pursuit of great chocolate. Between the lake, the wetlands, the rainforests and the volcanoes, Nicaragua is home to any number of micro-climates in and around the region of Granada - where they are headquartered. Argencove's first four signature single-origin dark chocolate bars are not only named after four national landmarks around the Granada region, but are made with beans from four chocolate plantations all located in four different micro-climates resulting in four distinct flavors in the chocolate, depending on the where they are grown. Agrencove takes advantage of all the nuances in their signature single origin bar collection (see below) - all award-winners. They also make a series of single-origin inclusion bars (see below - some also award winners!), and a new line of dual-origin dark milk bars. Sally McFadyen, one of the founding members of Argencove, will be here - come down and say "hi!"

KARUNA CHOCOLATE - Italy: 
Armin Untersteiner and Katya Waldboth both live in South Tyrol, a German-speaking region in Northern Italy.  When they founded Karuna Chocolate in 2018, they were the first in the region to produce organic bean-to-bar chocolate. In 2014, Katya had the opportunity to work in Southern India. While living there they were introduced to cacao farming. When they returned home, they discovered that no one was producing organic bean-to-bar chocolate. They decided to turn their newfound passion into a family project, and Karuna Chocolate was born. 


UTOPICK - Spain:
In 2007 Paco Llopis and Juana Rojas made the trip to Juana’s home country of Colombia. That trip would change the trajectory of their life together. While there they visited a cocoa farm, and when the peasants asked Paco to make chocolate, he realized his pastry training made him aware of how to handle chocolate and many pastry techniques, but he realized he did not know how to actually make chocolate from the beans. It was while on that Colombian cocoa farm when Juana and Paco decided that we would learn how to make chocolate from the beans, and where they discovered that chocolate does not come from factories, but that chocolate grows on trees.
