Nigella is used primarily in Indian and Middle Eastern cuisine. It is often found in Indian braised lamb dishes, where it lends particularly complementary flavor notes. We also find nigella seeds sprinkled on top of naan prior to baking, and it's often an ingredient in Garam Masala as well as Panch Phoran.
Nigella seeds may be used whole or ground. To bring out their flavor, gently fry or toast the seeds just before using them.
