Katz Black Button Sage Honey

It was spring when I met my honey

The cherry blossoms were blooming and the babies were out strolling with their newborn Moms.

Flowers and their buds were popping up everywhere. New green chutes, limbs and shiny leaves appeared out of nowhere.

It was warm, the sun was shining, and I was in my knickers.

Her nickname was Sage and she was cute as a button when we first met.

It’s an on-again, off-again love affair. More often than not she alternates years, sometimes even longer. Last year was a big year and why there is still honey to be had. Stormy weather and unexpected fires contributed to her presence and we wish her well. We hope she blooms again next year.

If you hadn’t figure it out by now, Sage is one of my honey loves. Her full name is Black Button Sage.

This wonderful honey is smooth and delicate. With a flavor that is more than just sweet "honey", it changes as it flows through your mouth. As you get to know her, you will find her to be a quiet shaped personality!

Nectar gathered at the foothills of the California coastal mountain range, black sage honey has a medium amber color in the jar and on the spoon it is a light amber color that looks so natural. It is the color of purity.

With wonderful notes of flowers, the flavor floats and flows freely across your tongue and through your mouth. One never tires of the taste of freshness that fills your senses. If you like honey that flows and never, ever crystallizes, then this is the honey for you.

Beyond tea, it is perfect with cheese or drizzled across a salad or a grilled peach. And for breakfast from crumpets to croissant to toast or oatmeal this honey makes life special.
