Pasta with Olives and Feta Recipe
1/2 pound pasta1 tsp olive oil
1/2 cup onion, thinly sliced
3 cloves garlic, minced
1 cup Piquillo Peppers, cut into strips
10 olives, chopped
1 tsp fresh oregano
1/4 tsp Haranea Organic Espelette Pepper
freshly ground tellicherry black pepper to taste
4 oz feta cheese, crumbled (1 cup) Pasta with Olives and Feta Cheese Recipe
Olives are rich and fruity, and make this Mediterranean-style recipe truly decadent. This recipe can be a main course for 2, or a side for 4.
Directions
1. Cook pasta in rapidly boiling salted water until pasta is al dente - about 9 minutes, depending on the pasta.
2. While pasta is cooking, heat oil in a large saute skillet.
3. Add onion and sauté until tender.
4. Add garlic and sauté until translucent but not browned. About 2 minutes.
5. Stir in olives, piquillo peppers, oregano, espelette red pepper, and black pepper.
6. Drain pasta and add to pepper mixture in the pan and toss. Add feta cheese and toss lightly.
Serve immediately.
