Savory Dill Pancakes with Smoked Salmon Recipe

ingredients:

1 ¼ cup all purpose flour

1 teaspoon ground cumin

2 teaspoons baking powder

1/1/4 cup milk

 

Directions:

1. Measure dry ingredients into bowl then  pour in milk whisking thoroughly.

2. Add more milk if necessary to make thick pourable  batter.

 

ingredients:

½ cup peeled, seeded cucumber

½ cup minced red onion

1/3 cup scallion green and white

¼ c finely diced dill

Salt/pepper 

 

Directions:

1. Mix veggies into the batter. Refrigerate for at least 6 hours

 To cook:

Use olive oil to fry the pancakes, cook 2 min per side, about 2 tablespoons batter per pancake

Can keep warm in 150 degree oven for a brief time

 

Serve pancakes with smoked salmon, crème fraiche and sprig of dill
