Toasted Grilled Cheese Recipe - the basics
One of the best comfort foods you can make with just a few ingredients!
Ingredients:
2 perfect pieces of bread - choose the bread carefully - it matters
2 slices of cheese (or more) to cover the slice of bread. Swiss and Beaufort is pretty perfect - though cheddar might bring back the biggest memory
Butter - the very best you can find - at least your favorite
Directions:
1. Heat your cast iron pan to 275°F to 300°F
2. Butter your bread on both sides - evenly and to the edges
3. Place one slice of bread in the pan and cover with cheese
4. Place the second slice on the top
5. Cover the pan to help the cheese melt
6. Flip when the bread is a nice golden brown
7. Watch closely and when the second side is nicely browned and the cheese is melted remove
8. Slice on a diagonal for best visual memory.
Consider adding mustard. Or adding a cheese to the finish on the outside of the sandwich like Parmigiano-Reggiano and getting wonderful crunchy crust. Adding Manzanilla stuffed olives is perfect!
All about Grilled Cheese:
Made in a pan or on a griddle with butter (or mayo) on the outside of the bread
The bread gets fried in fat, creating a rich, golden, crispy crust
Heat comes from direct contact with the cooking surface

Toasted Cheese:
Made in a toaster oven, broiler, or regular oven
The bread is toasted by radiant/dry heat, not fried in fat
Often open-faced (one slice of bread with cheese melted on top)
More common in British and Australian usage
In practice, the definition is blurred— especially in the US, where "grilled cheese" is the dominant term regardless of cooking method. Many people call any hot, melted cheese sandwich a grilled cheese, even if it was made in a toaster oven.
The most meaningful real difference is the cooking fat: a true grilled cheese gets its crispy exterior from butter in a pan, giving it a richer flavor, while a toasted cheese relies purely on dry heat.
