A bit cloudy to it’s origins, todays Bitters are direct descendants to the Bitter’s of the 1800’s. In fact there are still those from the 1800’s that are sold today. Bitters reached their zenith in popularity in the mid to late 1800’s.

Designated once as a cure-all medicinal for use as a way to cure upset stomach or as a way to cure almost anything, digestive and cocktail versions are now classified as a non-beverage alcohol product similar to Vanilla. Comprised often of water, alcohol, spices and herbs. A revival of sorts started recently in the 90’s, and in the last two years it has become a hot product in bars.

Bitters are just that, bitter. Used as a flavoring for both mixed drinks and food they add a flavor that snaps. Measured in dashes, the potent drops can be a flavor changer or a subtle addition. Used in goulash, braised pork, wonton soup, or tartar sauce. To make ice cream, add to coffee or key lime pie.
