Honey is a natural sweet substance produced by bees from the nectar of flowers. It is composed mainly of sugars, such as fructose and glucose, and contains small amounts of vitamins, minerals, antioxidants, and amino acids.

The bees store this nectar in their hive, where it undergoes further evaporation to reduce water content, making it thicker and more concentrated. Once the honey reaches the right consistency, bees seal the honey-filled cells with beeswax to preserve it.

Depending on where in the world the bees live (the terroir), the source of the nectar (it is not always from flowers), will affect the flavor, the texture, and even how quickly the honey will crystalize.
