Andrea Bezzecchi of Acetaia San Giacomo is a perfectionist in everything he does.
His gourmet Balsamic Vinegars are truly special and unique.
San Giacomo Tradizionale and Balsamico’s are created with the purest process, creating balsamic vinegars in a battery of barrels. Andrea’s focus on preserving and using his ancestral method to create his elixir.
San Giacomo artisanal balsamics offer a unique and balanced alternative, sitting between the Traditional DOP Balsamic Vinegar and the PGI-certified “Balsamic Vinegar of Modena.” Since the beginning of the family business, they have consciously chosen not to produce the latter, which has been PGI-certified since 2009.
Balsamic Vinegar of Modena PGI is made from wine vinegar, concentrated and/or cooked musts (ingredients that may come from anywhere in the world), and often includes caramel. The only link to the region is the blending of these ingredients and a mandatory 60-day aging period before bottling, which can take place anywhere. In fact, 99.9994% of the “balsamic” products on the market are “aged” for 60 days and are made from at least two ingredients: wine vinegar and cooked must, often sourced from abroad.
In contrast, San Giacomo has never produced Balsamic Vinegar of Modena PGI or any similar mixed balsamic products. Their focus has always been on Fermented Balsamic Vinegar made 100% from a single ingredient: local, organic grape must. The must is cooked, fermented, and acetified in barrels before aging—without the addition of any wine vinegar.
Additionally, Andrea does not subscribe to the philosophy of producing overly dense condiments. In his view, density comes naturally from aging (as with Traditional Balsamic)
