Yuzu Financiers Recipe

ingredients:

85 grams unsalted butter - 6 tablespoons

1 teaspoon vanilla extract

114 grams almond flour (1 cup)

160 grams caster sugar (¾ cup)

1 ½ oz all purpose flour 

⅛ teaspoon table salt

4 large egg whites

1 1/2 tablespoons Yuzu extract


Directions:

1. Generously butter and flour 8 financier pans or 24 mini muffin pans. 

2. Preheat the oven to 350 °F.

3. In a small saucepan melt 3 oz unsalted butter over medium high heat. 

4. Continue cooking until the milk solids fall to the bottom of the pan and turn golden brown. 

5. Remove the pan from the heat. 

6. Skim off the foam on the surface and pour the butter into a small bowl, leaving the browned solids in the pan. 

7. Add 1 teaspoon vanilla extract and set the browned butter aside to cool.

8. In a mixing bowl, whisk the almond flour, sugar, 1 ½ oz all purpose flour and ⅛ teaspoon table salt.

9. Add the Yuzu extract to the egg whites

10. Use a wooden spoon to stir in 4 large egg whites. 

11. Mix until there are no lumps.

12. Stir in the browned butter.

13. Fill the molds two thirds full. 

14. Bake until the cake springs back when the center is pressed and they are golden brown around the edges. 


15. Bake time will vary based on the pan used, about 15-20 minutes.
