Sudachi Cream Cheese Cookies Recipe

ingredients:


115 grams cream cheese, room temperature

115 grams unsalted butter, room temperature

100 grams caster sugar

1 egg

1 teaspoon vanilla extract

3 tablespoons sudachi extract

200 grams all-purpose flour

1 teaspoons baking powder

60 grams or more powdered sugar, for rolling and dusting


Directions:

Preheat your oven to 350°F. Line a baking sheet with parchment paper.

In a large bowl, beat together the cream cheese, the butter, and sugar until smooth and creamy.

Add 1 egg, 1 teaspoons vanilla extract and 3 tablespoons sudachi extract, to the bowl and mix until well combined.

In a separate bowl sift the flour and baking powder and then whisk. 

Fold the flour into the egg mixture to prevent lumps. 

Stir until a soft dough forms. The dough will be sticky.

Scoop the dough into golf ball-sized portions. 

Roll each ball generously in 60 grams powdered sugar — the powdered sugar makes the dough easier to handle.

Place on the prepared baking sheet and bake for 10–11 minutes until the edges are just set. Centers should still look slightly soft.

Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack. Dust with extra powdered sugar if desired.
