Chocolate Cake Recipe

    Ingredients:

    Chocolate:
    6–8 oz 48% or darker chocolate discs or feves
  • Butter: 3/4 cup (1.5 sticks) unsalted butter
  • Sugar: 3/4 cup to 1 cup superfine sugar
  • Eggs: 4–6 large eggs, separated
  • Flour: 2-3 tablespoons almond flour and rice flour
  • Almonds: 4 tablespoons ground almonds (or 1 cup depending on version)
  • Flavoring: A pinch of salt; sometimes coffee or rum
  • Glaze: Melted chocolate, butter, and instant coffee/water

    Directions:


    Prep:
    Preheat oven to 350°F-375°F (175°C-190°C). Butter and flour a 9-inch springform pan.
  1. Melt Chocolate: Melt the chocolate and butter together over a double boiler 
  2. Egg Mixture: Beat the egg yolks with the sugar until they are thick and pale yellow.

  3. Combine: Fold the melted chocolate into the yolk mixture, then stir in the flour and ground almonds.

  4. Egg Whites: Beat the egg whites with a pinch of salt until stiff peaks form. Fold a small amount of whites into the chocolate to lighten, then gently fold in the rest.

  5. Bake: Pour into the pan and bake for 25–40 minutes (depending on the recipe version). The center should remain soft and slightly jiggly.

  6. Glaze: Melt chocolate with coffee/water, stir in butter, and pour over the cooled cake.
