Nabisco Famous Chocolate Wafers Icebox Cake Rice

This I remember so clearly. My Mom made it for my sister and she loved it. So much, I was given one taste and the rest was for her….

Sadly the cookie is no longer made… you can substitute with other cookies, still, it is just not the same.

 

Original Package Recipe 

ingredients:

1 package (9 oz) Nabisco Famous Chocolate Wafers

1 pint (2 cups) Heavy Whipping Cream

2 tablespoons Sugar (or Confectioners' sugar)

1 teaspoon Vanilla Extract 


Instructions: 

Prepare the Cream:

  1. In a large bowl, combine the heavy cream, sugar, and vanilla.
  2. Beat with an electric mixer on high speed until stiff peaks form.

Assemble the Log:

Spread a small amount of whipped cream onto one side of a wafer.

Top with another wafer and a little more cream.

Repeat, stacking the wafers together to form a stack.

Lay the stack on its side on a long serving platter to create a log shape.

Continue this process until all wafers are used (or until the log is the desired size).

Frost and Chill:

Cover the entire log with the remaining whipped cream, ensuring no cookies are visible.

Cover the cake loosely with plastic wrap and refrigerate for at least 4 hours, but preferably overnight, to allow the cookies to soften.

Serve: Slice the cake diagonally to showcase the zebra-striped pattern. 

Optional: Garnish with shaved chocolate or cocoa powder.
