Yuzu Madeleine Recipe

Cook Mode (Keep screen awake)

ingredients:

2 eggs

1/3 cup sugar

112 grams butter - 8 tablespoons

1 tbsp honey

2 tbsp yuzu extract

1/2 cup flour

1 tsp baking powder

 

directions:

  1. In a mixing bowl, add the eggs and beat them lightly.

  2. Add the sugar to the beaten eggs and mix until well combined.

  3. Sift the flour and baking powder and then whisk together.

  4. Add to the egg mixture and whisk in.

  5. Whisk the Yuzu extract in.

  6. Melt the butter and add the honey and mix. Let cool slightly 

  7. Slowly pour the butter-honey mixture into the egg mixture, stirring continuously.

  8. Once the batter is well mixed, cover the bowl and let it rest in the refrigerator for 1-2 hours. 

  9. Preheat the oven to 350ºF (175ºC) 

  10. Grease the Madeleine  baking pan with butter and dust them lightly with flour to prevent sticking.

  11. Spoon a dollop of batter into each mold of the prepared Madeleine pan.

  12. Bake for about 12 to 15 minutes, or until the edges of the Madeleines turn golden brown.

Cover with a thin dish towel as they cool and then turn onto a baking rack.
