Wafu Dressing with Yuzu Recipe

Wafu (和風) means "Japanese-style," and at its core, wafu dressing is made with vegetable oil, rice vinegar, and soy sauce. The basic version consists of soy sauce, rice vinegar, mirin, and vegetable oil, with many variations flavored with extras like grated ginger, toasted sesame, or citrus fruits such as yuzu. 

ingredients:

2 tablespoons shoyu

1 tablespoons rice vinegar

1 tablespoons dashi stock

1 teaspoons toasted white sesame seeds

1 tablespoons ground sesame seeds

1 teaspoons sugar

1 yuzu zest or lemon

1 tablespoon yuzu extract

1 tablespoons toasted sesame oil

 

Directions:

1. In a bowl, add 2 tablespoons shoyu, add the rice vinegar, dashi stock, toasted white sesame seeds, ground sesame seeds, and sugar. 

2. Mix well until the sugar is fully dissolved.

3. Add the zest and the extract into the bowl. 

4. Mix vigorously to combine.

5. Gradually pour the toasted sesame oil down the edge of the bowl while whisking vigorously until emulsified. 

6. Pour into a container and drizzle over your favorite salad. 

A little goes a long way so start with a small amount first.
