Spaghetti alla Colatura Recipe

A toss the pasta with a no cook sauce. Full of flavor classic dish

Ingredients:

400g spaghetti 
45ml (3-4 tbsp) Premium Fish Sauce, 
1-2 garlic cloves - paste
20g fresh parsley - chopped
1 tsp hot chili flakes
5 tbsp extra virgin olive oil.

Directions:

1. Cook the pasta in unsalted water

2. Whilst the pasta cooks, gently fry the garlic and chili in olive oil over low heat.

3. Remove the garlic once golden.

4. Add the fish sauce to the oil, along with a tablespoon of the pasta cooking water, and mix

5. Drain the pasta al dente and add it to the pan. Toss for 1–2 minutes, adding more pasta water if necessary to create a creamy sauce.

6. Remove from heat, toss with fresh parsley, and serve immediately
