Masala 'Chai' Quinoa Pudding Recipe

This is a wonderful breakfast, or dessert dish. The Chai-style spices are so wonderfully aromatic.

Recipe courtesy of Chef Extraordinaire, Lauren Feldman. She made this dish last night in the Grains Workshop, and it was delicious.

ingredients
1 cup water
1 ¼ cup milk
2 whole cardamom pods
2 whole cloves
½ cinnamon stick
2 or 3 ‘coins’ of fresh ginger
1 cup quinoa, rinsed
Pinch of salt
Honey to taste
Lightly toasted, chopped almonds
Dried or fresh fruit of choice

directions
1. Bring water, milk, spices and ginger to a boil. Turn off heat, cover, and let spices steep for 15 minutes.

2. Strain out spices. Return spiced milk to the saucepan and add soaked quinoa. Bring mixture to a boil, then turn down heat, cover, and cook for about 15 minutes. Quinoa should be soft and the mixture should still have some moisture. Let sit, covered, for 5-10 minutes.

3. Serve in a bowl with a drizzle of honey, dried fruit and/or nuts. More milk can be added also, if desired.
