Green Goddess Dressing Recipe
1 clove of hard-neck garlic
2 cups of traditional mayonnaise
4 salt-packed anchovy fillets - soaked, filleted and minced
1 green onion - chopped
2 teaspoons fresh parsley - chopped
2 teaspoons chives - chopped
1 tablespoon herb vinegar - such as thyme vinegar
1 teaspoon fresh tarragon - cut
Green Goddess Dressing Recipe
This creamy dressing recipe was invented by the executive chef at the historic Palace Hotel in San Francisco in the 1920's in honor of William Archer, a frequent patron of the hotel, and the star of the hit play, "The Green Goddess." It is a perfect substitute for Ranch or Thousand Island Dressing on top of bib lettuce or as a veggie dip.
directions:
1. Rub inside of mixing bowl with clove of garlic.
2. Mix together mayo, anchovies, onion, parsley, chives, vinegar and tarragon.
3. Refrigerate until ready to us. Serve on top of wedges of bib-lettuce or as a veggie dip.
