Spicy Sesame-Ginger Smashed Cucumber Salad Recipe

Ingredients:

2 large English cucumbers (or 4 Persian cucumbers)
1.5 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon Wadaman's Roasted Sesame Oil (finishing oil)
1 teaspoon chili crisp or sriracha (adjust to taste)
1 garlic clove, finely grated
0.5 teaspoon fresh ginger, finely grated
1 tablespoon toasted sesame seeds
0.3 teaspoon salt


Directions:

Smash the cucumbers:

Wash and dry the 2 large English cucumbers (or 4 Persian cucumbers). 

Place on a cutting board and use the flat side of a heavy knife or a rolling pin to gently smash them until they split open.

Chop and salt: 

Cut the smashed cucumbers into bite-sized, irregular chunks. 

Place in a colander, toss with the 0.3 teaspoons salt, and let drain to draw out excess water.

Mix the sauce: 

In a medium bowl, whisk together the 1.5 tablespoons soy sauce, 1 tablespoons rice vinegar, 1 teaspoons chili crisp or sriracha (adjust to taste), 1 garlic clove, finely grated, and 0.5 teaspoons fresh ginger, finely grated.

Toss: 

Pat the drained cucumbers dry with a paper towel and transfer to the bowl with the sauce. 

Toss until well coated.

Finish and serve: 

Drizzle the 1 tablespoons Wadaman's Roasted Sesame Oil (finishing oil) over the top and sprinkle with 1 tablespoons toasted sesame seeds. 

Toss gently one last time and serve immediately.
