Roasted Potatoes and Goat Cheese Recipe

8 large, russet potatoes - peeled and and cut lengthwise into wedges


1/2 cup Essential Pantry rice bran oil



2 tablespoons fine sea salt


4 teaspoons Herbes de Provence 

1 10-11-ounce log of soft, fresh goat cheese - crumbles
Roasted Potatoes with Goat Cheese & Herbes de Provence Recipe

This recipe is about as easy as you can get. Oven-roasting potatoes is one of my favorite ways to cook potatoes - and using rice bran oil helps them become nice a crisp. You can also use olive oil or butter.

Directions:

1. Preheat oven to 450 degrees F

2. Toss potato wedges, rice bran oil, sea salt, and Herbes de Provence in a bowl.

2. Arrange potato wedges in a single layer on 2 baking sheets.

3. Bake until potatoes are tender and golden brown - about 45 minutes.

4. Turn potatoes and rotate the sheets half way through baking.


5. Dot potatoes with goat cheese crumbles and bake another 2-3 minutes.

6. Serve warm
