If there is one thing Wadaman is known for, it is roasting sesame!
Rather than roasting sesame once, Wadaman slowly roasts the seeds three times — first at a low temperature, then hotter, before finishing again at a lower temperature. By carefully working with the sesame's own natural oils, the seeds become remarkably round, developing a crisp bite and an exceptionally deep, fragrant aroma.
Their sesame pastes receive the same patient treatment. Roasted seeds are ground slowly at low temperatures using traditional ceramic grinding stones, passing through the mill four or five times until the natural oil content produces a smooth, creamy paste without sacrificing the flavor developed during roasting.
Their Japanese-grown sesame is JAS Organic certified and produced without pesticides or chemical fertilizers.

Our favourite cocoa
I have 8 varieties of cocoa at home -- red cocoa, black cocoa, natural cocoa, and several high-end specialty cocoas (Barry Extra Brut, Valrhona, Guittard, Ghirardelli...). My family goes through enormous quantities of cocoa powder -- for hot cocoa, brownies, chocolate cakes, cookies... and this is by far our favourite. It has depth, complexity, and richness. While the specialty cocoas are excellent, I find they can sometimes be quite bitter, lack richness or body. This one is always perfect for whatever we are making. And being in Canada, I go to great lengths to buy this cocoa -- that should tell you how much we love it! - Monika
