Also knowns as Gumbo File Powder, Sassafras is the powdered leaves of the sassafras tree. Gumbo File Powder is a necessary ingredient used in authentic Creole or Cajun Gumbo File. When ground, they smell somewhat like eucalyptus or juicy fruit gum.

Long before the use of gumbo file powder in Creole and Cajun cooking, American Indians pounded sassafras leaves into a powder and added them to soups and stews as a way to add an unusual flavor. The Sassafras or gumbo file powder also acts as a thickener when added to liquid.
