For Messàge in the Bottle, the flavorful heads of the prawns—rich in the coral that gives red prawn much of its extraordinary character—are selected and rapidly frozen aboard the fishing vessel at –58°F (–50°C). They are then used to create the intensely flavored red prawn seasoning contained in each bottle.
