A deeper, more intense expression of Panama—where cacao and coffee meet in their most refined forms. This bar features Geisha coffee processed using the honey method, a technique that sits between washed and natural processing. After the coffee cherry is harvested, the outer skin is removed, but the sticky, sugar-rich mucilage (the “honey”) is left on the bean as it dries. This careful, hands-on process enhances sweetness, body, and complexity—resulting in a cup (and here, a chocolate) that carries notes of ripe fruit, golden honey, and soft florals.
In Panama’s Boquete highlands, where Geisha coffee is grown at elevations above 1,500 meters, this method brings out an even richer side of an already legendary coffee varietal. You still find Geisha’s signature elegance—jasmine, citrus, delicate aromatics—but with added depth: caramelized sugars, stone fruit, and a silky, rounded texture.
Nomé pairs these honey-processed Geisha beans with dark, tropical cacao from Bocas del Toro. The 77% cacao base provides structure and intensity, allowing the coffee’s layered character to unfold gradually—first aromatic, then fruity, finishing with a lingering, almost nectar-like sweetness.
