This marriage of the Forest and Sea came about as a tribute to close friends of the chocolate maker, with one part of the couple growing up on the coast and the other in the woods. To recreate the special notes of their union, Kasama combined whole rosemary with Pacific Ocean sea salt, infusing the blend into 65% dark chocolate from Ecuador.

The result is a wholly unique and bold blend of deep pine notes from the rosemary and the bright salinity of the sea. The aroma when opening the bar will bring to mind a fragrant walk in the woods. The salt hits almost instantly, with long flavors of the rosemary carrying you along on your journey. Lovers of mint chocolate will enjoy this bar, as well as those looking for a bold, herbaceous chocolate experience.

Our favourite cocoa I have 8 varieties of cocoa at home -- red cocoa, black cocoa, natural cocoa, and several high-end specialty cocoas (Barry Extra Brut, Valrhona, Guittard, Ghirardelli...). My family goes through enormous quantities of cocoa powder -- for hot cocoa, brownies, chocolate cakes, cookies... and this is by far our favourite. It has depth, complexity, and richness. While the specialty cocoas are excellent, I find they can sometimes be quite bitter, lack richness or body. This one is always perfect for whatever we are making. And being in Canada, I go to great lengths to buy this cocoa -- that should tell you how much we love it! - Monika
