This 90% dark chocolate from Definite Chocolate is made with organic cacao from Barahona, a lush coastal province in the southern Dominican Republic that is emerging as an exciting source for fine-flavor cacao. Despite the high cacao percentage, the bar isn't simply about intensity. Look for bright citrus notes, roasted nut character, and subtle hints of spice, all carried by the deep, concentrated flavor of Dominican cacao.
The cacao comes from BhonaCao in Paraíso, Barahona, where founder Omar Caraballo has been working with local growers to develop the region's cacao potential. After disease severely affected local coffee crops, cacao became an increasingly important alternative for area farmers. BhonaCao works directly with producers on cultivation, quality, fermentation, and post-harvest practices while developing nurseries and clonal gardens aimed at improving cacao quality over time.
Definite Chocolate began working with BhonaCao after founder Jens Kamin met Caraballo at the Dominican Chocolate Festival in 2021. Their collaboration produced the first chocolate bars made with cacao from Barahona, and the two have continued refining fermentation and post-harvest techniques to bring out the distinctive character of the region.
For lovers of high-percentage chocolate, this is an especially interesting bar: powerful and cacao-forward, but with enough citrus brightness and nuttiness to give the chocolate dimension and keep the finish lively.
