cocoa nibs, sugar, cocoa butter

58 g bar – Paris, France

Made with heirloom cacao from Ocumare, Venezuela, this 74% dark chocolate is a beautiful example of why Ara Chocolat is so passionate about preserving distinctive Venezuelan cacao.

Ara sources the cacao directly from producers Zoraida and Tapiruso, building the kind of close relationship that allows exceptional beans—and the people growing them—to remain at the center of the chocolate. The finished bar is remarkably smooth and creamy, with a natural sweetness that feels beautifully integrated with the cacao.

When tasting the bar, we first notice rich, almost fudgy chocolate, followed by roasted nut notes and then a gorgeous wave of dried fruit. The fruit gives the bar brightness while the fudge-like character brings us back to something deep, comforting, and chocolatey. For a 74% bar, it feels exceptionally rounded and balanced.

Tasting notes: Fudge, nuts, dried fruit.

Cacao: Heirloom cacao from Ocumare, Venezuela. Direct trade.

About Ara Chocolat: Founded in Paris in 2015 by Venezuelan chocolate makers Andrés Zakhour and Sabrina Trillos, Ara Chocolat makes micro-batch bean-to-bar chocolate with an extraordinary focus on cacao origin and biodiversity. Andrés works directly with growers and cooperatives throughout Latin America to source rare native and ancestral cacao varieties, building transparent relationships while helping preserve the remarkable diversity of fine cacao. Ara roasts and crafts its chocolate in its small Paris workshop, allowing the character of each origin and cacao variety to remain at the center of every bar.
