The cacao is organically farmed and fairly traded, then given a light roast and light conche to preserve more of the bean’s natural flavor. Madagascar cacao is especially known for its bright acidity, and here that comes through as a clear citrus note layered with richer flavors reminiscent of dulce de leche and buttery shortbread.
The result is a dark chocolate that feels both vibrant and comforting: tart fruit and citrus up front, followed by softer caramelized and cookie-like notes as the chocolate melts.
