Juicy mango, bright lime, salt, and chile come together in this wildly flavorful cocoa butter bar inspired by the fruit carts of Thailand.
SOMA created the bar after encountering fresh fruit vendors serving ripe mango sprinkled with prik glua, the Thai combination of chile, salt, and sugar. Their version starts with an almost extravagant amount of mango folded into rich cocoa butter, then adds lime, Thai chile, Aleppo pepper, and salt to amplify the fruit’s tropical sweetness and earthy depth.
This second edition turns up the intensity with sour green mango, or amchoor, and an extra hit of Thai chile. The first impression is lush, ripe mango, followed quickly by tart citrus and green-mango tang. Then the spice begins to build—not enough to bury the fruit, but enough to give the bar a lively, lingering warmth.
Creamy, fruity, tart, salty, and spicy all at once, it’s less like conventional chocolate and more like a Bangkok fruit cart translated into a bar.
