True honey vinegar is obtained by the slow oxidation of honey mead that is aged in oak barrels. During the aging process, the alcahol is slowly converted into acetic acid and the organoleptic qualities are a direct product of the honey used - in this case Fir Tree Honeydew honey. Water from natural alpine sources and honey are the only ingredients.

Slightly sweet, this vinegar is perfect replacement for wine or rice vinegar in marinades, salad dressings, and with fish.
