Lush and tangy, KARÜ's Maracuyá bar captures the everyday joy of passion fruit as it’s enjoyed across Colombia and Latin America. Known locally as maracuyá, this vibrant fruit appears in juices, desserts, and home cooking—and here it’s paired with dark milk chocolate to create a bar that is both bold and beautifully balanced.

The cacao for this bar comes from Tumaco, a coastal region celebrated for cacao with natural fruit acidity and aromatic clarity. At 50%, the dark milk base offers structure and depth, while milk powder adds creaminess that softens the cacao’s edges without muting its character.

Freeze-dried passion fruit is added to the chocolate to preserve its bright, citrus-driven acidity and unmistakable tropical aroma. Finely ground passion fruit seeds add a pleasing crunch, echoing the texture of the fresh fruit and giving each bite a lively, engaging finish. The result is a chocolate that moves effortlessly between creamy and tart, rich and refreshing.

As with all KARÜ bars, the Maracuyá bar is made entirely at origin. After fermentation and sun-drying at the cacao farm, the beans are transported to Bogotá, where KARÜ manages the full bean-to-bar process in small batches—roasting, refining, tempering, and molding—before passion fruit is added just prior to molding for freshness and clarity of flavor.
