Here, people have lived off the ocean for centuries and have strong traditions for respecting nature's resources. As a result, they have very high standards for sustainable local fish farming. This salmon has been flash-grilled and then preserved in cold-pressed rapeseed oil - the Nordic oil of choice. Being from the Northwest, we rarely eat salmon right not of the tin ... but for this one, we make an exception, the next best thing to fresh.
