This bar begins with Ara Chocolat’s 70% grand cru cacao from El Salvador. From there, the makers add two beautiful elements: caramelized almonds for a gentle crunch and warmth, and dried rose petals that bring a subtle floral lift.

When I taste this bar, I’m always struck by how gracefully the flavors come together. The deep, earthy richness of the cacao forms the foundation, while the almonds add a satisfying nutty sweetness and texture. Then the rose appears quietly in the background—never perfumy or overwhelming, just a soft floral note that brightens the whole experience.

This bar is such a joy to experience! One bite highlights the cacao and almonds, another brings forward the rose. Reader beware: It can be challenging to stop snacking on. I keep getting stuck on how how brilliantly crisp the nuts are and needing to take another nibble to experience them again.

Ara Chocolat has a real gift for pairing heirloom cacao with thoughtfully chosen ingredients. For me, this bar feels a little celebratory—beautiful to share, but just as rewarding to savor slowly on your own.

Our favourite cocoa I have 8 varieties of cocoa at home -- red cocoa, black cocoa, natural cocoa, and several high-end specialty cocoas (Barry Extra Brut, Valrhona, Guittard, Ghirardelli...). My family goes through enormous quantities of cocoa powder -- for hot cocoa, brownies, chocolate cakes, cookies... and this is by far our favourite. It has depth, complexity, and richness. While the specialty cocoas are excellent, I find they can sometimes be quite bitter, lack richness or body. This one is always perfect for whatever we are making. And being in Canada, I go to great lengths to buy this cocoa -- that should tell you how much we love it! - Monika
