This Deep Dark Dutch-processed dark unsweetened cocoa powder is in a class unto itself. We have removed less fat from our cocoa (22-24% fat content), which results in a more intense and immediate chocolate flavor.
This "service pack" of ChefShop cocoa powder is designed for commercial users like baristas, bakers, and gelato makers. It is sealed in a thick zip-lock style bag for production baking with a Plain Jane label. Like many of the foods and ingredients that go to the back of the house, the contents are more important than being pretty.
And price relative to quantity is also a crucial part of the commercial kitchen. So that is why we have chosen this cocoa, for the quality and consistency of product relative to the cost.

Cocoa Powder Hot Chocolate Recipe
This is a classic hot cocoa recipe - and is even better with this new cocoa powder!
ingredients:
2 1/2 cups whole milk (or 2 cups milks and 1/2 cup half and half)
1/2 cup Super Fine Caster Sugar
3/4 cup ChefShop Cocoa Powder
1/4 teaspoons fine Sea Salt
1/2 teaspoon 2x Vanilla Extract - optional
directions:
1. Add the cocoa powder, sugar and salt into the milk in a saucepan.
2. Whisk constantly over medium heat until the mixture is just below boiling and the sugar has dissolved.
3. Continue to whisk constantly, for 1 minute. Remove from heat and add vanilla if desired. Blend and serve immediately.

1 Cup milk
2 tablespoons Cocoa Powder
1 to 1 1/2 tablespoons caster sugar
tiny pinch of salt
1. Heat milk in saucepan or microwave
2. Add cocoa powder and sugar and whisk thorougly
3. Heat more if necessary

If heaven made unsweetened cocoa, this is it. Have been using Perignotti cocoa powder for a number of years. The flavor and density of the chocolate is so delicious everything you baked is elevated. It did take me awhile to go through 2 lbs of cocoa, which is why I kept searching for it before I ran out. How happy I was to find it again….love it love it. Nothing else can compare!

This cocoa powder is dreamy for baking as well as making hot chocolate and other drinks. The fat content lends a terrific texture and lingering flavor; the overall profile is intense but not overwhelmingly bitter. I think it strikes an excellent flavor balance. Highly recommend for any recipe which demands a superior quality chocolate!

Everything is lovely; however, my cookies were put on the bottom of the box and heavy fig preserves and fruit cake were packed on top of them, so the box was crushed. They were supposed to go in my sister's stocking, but it's not nice to put a crushed box in someone's Christmas stocking.
This cocoa was not as good as what used to come from Italy, as you know. But if it is the best you can get now, i will continue to buy it. My test is always to make a cup of hot cocoa. It was good, but next time I’ll add a bit more cocoa powder and a touch more of vanilla 😊. Thank you for having these great products available for my kitchen!
