Possessing a wonderful nose of ripe olive with notes of almond, it's smooth and silky. It opens with a big, ripe olive flavor and rolls smoothly with hints of nut and sweetness to nice buttery finish and a slight trace of pepper at the back of the throat. It is a perfect all-purpose oil, but it will shine most on pasta, fresh or dried. Try TIBVRTINI Extra Virgin Olive Oil drizzled on a salad of fresh, sweet cantaloupe cubes and fresh arugula leaves finished with a few grindings of pepper and some sea salt. Tibvrtini was rated in the spring of 2002 as one of the 7 BEST olive oils in the World by Taste magazine. Tibvrtini Background This oil named TIBVRTINI springs from trees growing on the ancient land of Villa Adriana - the Villa of the Roman Emperor Hadrian located in Tivoli built between 115 and 135 A.D. The Villa is located in the small but exceptional olive-growing region near Rome, Lazio. The trees are most likely descendants of the olive groves that grew there during the period of ancient Rome. TIBURTINI oil is from the first cold pressing of freshly hand picked olives - a combination of both green and ripe organically grown olives. The mill is located just below the hills of 500 MLTivoli, adjacent to the famous Roman travertine quarries. The olive varieties that give this non-filtered oil its distinctive, delicate, and complex flavor include Brocanica (grown exclusively in Tivoli with possible origins in Egypt), Montanese, Oliva Dolce, Romana, Carboncella, and Rosciola - grown using organic methods.
