This bar greets the nose with gentle smoke and nutty undertones, a roasted perfume unique to hojicha. On the tongue, sweetness gives way to a round, toasty flavor: notes of caramelized grains, chestnut, and faint cocoa butter warmth. Hojicha was one of the first Japanese flavors KESSHŌ founder Liang embraced during her pastry training in Tokyo. Its roasted elegance spoke of tradition and restraint, qualities that align with KESSHŌ’s philosophy of balance and clarity. In weaving hojicha into white chocolate, KESSHŌ created a bar that embodies the reflective side of their craft: chocolate not as indulgence alone, but as a thoughtful moment of pause.
