Sauteed Sea Asparagus Recipe

Easy and quick. Great alternative to raw sea asparagus (sometimes called "sea beans") -- and a perfect side to white fish.

ingredients:
1/2 pound sea asparagus
1-2 shallots or wild leeks - sliced.
butter or cooking fat
Fresh lemon juice

directions: 1. Clean and soak sea asparagus for 1-2 hours in cold water. Drain.

2. Saute shallots (or ramps) in cooking oil on low heat for 4-5 minutes. Add asparagus to pan and saute for an additional 2-3 minutes. Place in serving dish, and sprinkle with squeeze of fresh lemon juice.
