Garlic and Olive Oil Mayonnaise Recipe

Ingredients:

3 large garlic cloves, peeled

Coarse sea salt

2 egg yolks

1 tablespoon yuzu, or lemon juice or vinegar

1 - 3/4 cups, extra-virgin olive oil


Directions:

1. Combine the garlic cloves with sea salt in a mortar and pestle (or a bowl) and work the mixture to a smooth paste

2. Add the egg yolks and the yuzu juice or vinegar

3. Slowly add the olive oil and work in

4. If the mayonnaise starts to thicken too much and becomes difficult to work with, add drops of water until it becomes manageable

 

If you make it in a bowl, chop and crushed the garlic before hand and put it in the bowl with the egg yolks, Yuzu or vinegar and then slowly stir in the olive oil with a wooden spoon.
