cacao nibs, organic cane sugar, tomatoes, dried coconut, coconut milk cacao butter, spices

75 g bar - Chiang Mai, Thailand

Inspired by the aromatic flavors of Thai tom kha, Siamaya’s Thai Coconut Curry bar combines 65% dark chocolate with coconut, lemongrass, galangal, candied tomato, and a restrained touch of Thai chile.

The coconut softens the dark chocolate and gives the bar a creamy, rounded texture, while lemongrass and galangal bring bright citrus and herbal notes. Candied tomato adds a subtle sweet-savory dimension, and the chile stays in the background, contributing warmth rather than dominating the flavor.

It’s an unusually layered chocolate that manages to feel both playful and cohesive—a true savory-inspired bar with enough sweetness to remain unmistakably chocolate.

Try it with a cold Thai beer such as Singha or Chang, Thai milk tea, or alongside mango sticky rice for a pairing that leans fully into its Thai flavor profile.

Tasting notes: Coconut, lemongrass, herbal.

Dietary: Vegan and gluten-free.

Ingredients: Cacao nibs, organic cane sugar, tomatoes, dried coconut, coconut milk, cacao butter, spices.
