cacao nibs, organic cane sugar

75 g bar - Chiang Mai, Thailand

Dark, intense, and remarkably expressive, Siamaya’s 85% Signature Dark Chocolate is made with cacao from Northern Thailand and just enough organic cane sugar to let the character of the beans take center stage.

The cacao reflects the region’s distinctive terroir and fermentation practices, with notes of red fruit, roasted nuts, and deep chocolate. At 85%, this is a serious dark chocolate, but the flavor is more nuanced than simply bitter or bold. The fruit and nut notes give it dimension, while the low sugar level keeps the finish clean and cacao-forward.

Siamaya buys its cacao directly from Cocoa Nakorn Lampang Community Social Enterprise and other farmers in Northern Thailand. By working closely with local producers and supporting healthy soil and sustainable farming practices, the company aims to strengthen the long-term future of cacao growing in the region.

This is a particularly good bar for pairing. Try it with Cointreau or another orange liqueur, a cup of Earl Grey or Darjeeling tea, or after a spicy Thai meal, when the intensity of the cacao makes an especially satisfying finish.

Tasting notes: Red fruit, nuts, deep chocolate.

Dietary: Vegan and gluten-free.

Ingredients: Cacao nibs, organic cane sugar.
