Every day Arcelia walks the streets of Sao Paulo and passes guava trees; they grow all around her in the true concrete jungle of Sao Paulo, Brazil. For her, the guava, is the face of tropical fruit. This bar is made with only cacao, sugar and mini candied guava chunks dropped on top - and evenly spaced, so you get a piece of candied guava with every chocolaty bite.

Guava has an interesting flavor often described as a mix of pear, strawberry, and mango. Depending on the variety of guava, its flavors can vary from intense and sweet to almost floral. The guava's flavor can be overpowering, so marrying guava with chocolate successfully calls for a talented chocolate maker who understands balance. This bar strikes that perfect balance; the guava flavor notes come through, but they do not overpower the underlying chocolate bar.
