Crafted from cacao grown deep within Colombia’s rainforest, KARÜ Jungle Dark 85% is a bold, uncompromising expression of origin and craft. This single-farm bar is made with cacao from Finca Villa Sofía in Córdoba, where humid jungle conditions and rich soils produce cacao of remarkable depth and intensity.
The beans are cultivated by cacao farmer Alex Antonio Ayala, whose harvests have been recognized among the Top 50 cacao beans in the world. At 85%, this chocolate is powerful yet precise, offering deep cocoa character with earthy undertones and a long, resonant finish that reflects its rainforest origin.
Made bean-to-bar in Colombia, the chocolate is crafted using only two ingredients: cacao beans and unrefined cane sugar (panela). The use of panela preserves the cacao’s natural intensity while adding gentle warmth and balance, rather than overt sweetness. The result is a dark chocolate that feels serious, grounded, and connected to its origin.
As with all KARÜ bars, the cacao is fermented and sun-dried at the farm, then transported to Bogotá for roasting, stone grinding, tempering, and molding in small batches. This careful control at every stage allows the distinctive character of Villa Sofía’s cacao to remain front and center.
