About Asin Tibuok:

One of the rarest salts in the world, Asin Tibuok is a remarkable culinary artifact from the island of Bohol in the Philippines. Often called “dinosaur egg salt” because of its striking orb shape, this traditional sea salt is produced using a centuries-old method that transforms seawater, coconut husks, and fire into a solid sphere of mineral-rich salt.

The process is slow, meticulous, and rooted in Filipino heritage. Coconut husks are soaked in seawater for months before being dried and burned into ash. Seawater is then filtered through the ash to create a concentrated brine, which is poured into clay pots and baked over a wood fire. As the brine evaporates, the salt crystallizes inside the pot. When the vessel finally cracks from the heat, it reveals a solid white sphere of salt hidden inside.

The entire process takes more than four months, and only a small number of artisans on Bohol continue the tradition today.

Asin Tibuok has a clean, mineral salinity with a subtle smoky character from the coconut husk fire. Because it forms as a dense solid orb, the salt is typically grated, shaved, or chipped over food rather than used as loose crystals. Traditionally, families would tie a string around the salt and dip it directly into rice porridge or soups.

Today, chefs use it as a finishing salt to add depth and drama at the table—grated over grilled fish, vegetables, roasted meats, or even desserts like chocolate and ice cream.
