


Winter Greens and Farro Recipe
1 cup farro (Emmer)
3 cups water
1 lb. organic kale, mustard greens or chard
3 Tbsp. vinegar
2/3 cup olive oil
1 Tbsp. honey, or to taste
1 cup chopped dried tart cherries (or dried cranberries)
This perfect fall/winter dish is a prime example of what good produce and a few choice ingredients can get you.
Directions:
1. Bring lightly salted water to boil. Add farro and turn heat down to simmer; cover and cook for 45 minutes to an hour, until grains are "al dente".
2. While farro is cooking, rinse greens well and chop them into small pieces. Combine with cooked farro while still warm. Mix in dried tart cherries, or dried cranberries.
3. Combine vinegar, olive oil and honey, and pour over ingredients. Toss well to coat. Serve immediately or let rest at room temperature to cool.
