Tomato Pasta Soup Recipe

Tomato Pasta Soup Recipe from The Blue Zones cookbook. It is an informative look at the foods people are eating in the Blue Zones.

Ingredients:

4 cups of water

2 cups of vegetable

One fresh tomato, chopped or one 15 ounce can fire roasted chopped tomatoes

One cup, roasted tomato sauce

2 tablespoons olive oil oil

1 pound Pastina or similar shortcut pasta like orzo

1 teaspoon sea salt

 

Directions:

1. In a large soup pot, bring water and broth to boil.

2. Add tomatoes, tomato sauce, olive oil, pastina, and 1 teaspoon sea salt.

3. Stir to combine.

4. Reduce heat to low and bring pot to a simmer.

5. Cook until you see very small bubbles and broth is thickened, about 20 minutes.

6. Stir occasionally, so pastina doesn’t stick to the bottom of the pan.

7. Add salt and pepper to taste.
